For example , an existing 12" lvl ridge and remodel adds weight (dormer) so ridge needs 2ply 16" lvl. I'd like to include the 12" and the 16" plys in the same beam as long as all plys bear equally.

For walls, we typically use stud grade 2x6. It would be nice to see stud grade as a material option.
