When running joist and beams I need to be able to run a member without rim-board or blocking but most bearing type options do not allow you to choose the "none" option for the accessory which means you have to increase the bearing width to account for the rim board it adds. It is very annoying.

For the example you've provided in the screenshot, you would use the Blocking option which allows the member to get full support while still providing lateral stability for the member. Most conditions need an accessory for lateral stability and load transfer from directly above the support.
